Why Do Old Books Smell?

Walk into a used bookshop and you will encounter the unique aroma of aging books. The smell is loved by some, disliked by others, but where does it come from?

I like the smell of used books too. But if I stuck my face in an old book and took a big huff of it like that guy, I'd be coughing my head off.
